It’s Dinner Time — Om Nom Nom!

I don’t know about you, but sometimes I feel so tired of coming up with something to cook for dinner. You have to do that EVERY day!! No wonder people like to eat out or order in so much!

In the interest of healthier eating, saving money and not having to think of a PLACE to eat, today, I searched through my Pinterest boards looking for an interesting and delicious recipe for our evening meal. Yep, that’s me, PLANNING ahead!!! (For once!!)

Because I was thinking healthy — I figured a meatless dish, would definitely fit the bill. So, I sifted through my Weekday Vegetarian board to see what yummy recipes I have saved. You know, I have a LOT of scrumptious dishes stored there — I should look through my pinned stuff more often!

After checking out a few ideas, I decided on a recipe from Lindsay,who together with her husband, publishes the food blog — A Pinch of Yum. The recipe, Roasted Tomatoes with Goat Cheese Polenta  caught my eye as it sounded flavourful and easy — so I headed to the store to get a few of the ingredients that I was missing then came home, put on my apron (joking!) and set to work.

Now, I’m no photographer, so the photo doesn’t do the dish justice — but to be fair, I took the following photo just when we were all sitting down to eat AND I was ravenous! Not a great time to be taking a picture of a plate of food!
